Cuisine in Kyrgyzstan leans heavily on meat, especially lamb, beef, and even horse. Kyrgyzstan has a deep-rooted nomadic history, and traditionally, the Kyrgyz people relied heavily on animal husbandry for their sustenance. Meat was a primary source of nutrition for these nomadic tribes, providing essential protein and fats necessary for their active lifestyle. Meat is also featured prominently in traditional dishes like plov, manti, and shashlik, which are enjoyed during special occasions, celebrations, and daily meals.
It's not impossible to live a vegetarian and vegan lifestyle in Kyrgyzstan but it may be difficult. In this guide, we'll explore Kyrgyzstan's vegetarian and vegan food landscape.
Vegetarian and Vegan Dining in Bishkek
As of September 30, 2023, there aren't any vegetarian or vegan specialty restaurants in Bishkek, Kyrgyzstan. However, I'm going to share some restaurants that I've visited that do carry vegetarian or vegan dishes. There are many cafes that carry salads and poke bowls. Even though the options are limited, understand that Kyrgyz people do love their meat and it's probably not a priority for these restaurants to create a plant-based menu.
1. Usta Turkish Restaurant
Usta Turkish Restaurant has two locations in Bishkek, one close to the city center and one in the southern part of Bishkek. I prefer the southern location because it's spacious, clean, and the atmosphere, and service exceeded expectations. Turkish cuisine is known for its meats but Usta has vegetarian/vegan options like salads, soups, and hummus that are all delicious. Check out their Instagram account to see their menu.

2. Baan Baan Thai & Caribbean Cuisine
Baan Baan Thai Restaurant is my go-to restaurant when I'm craving Thai cuisine. The interior of their Southern location is fully recycled, upcycled, and handmade. They even have live music performances on a frequent basis which makes it a perfect location for a date night or just a nice dinner. They have quite a bit of vegetarian options on their menu such as vegetarian pad thai, tom yum soup, spring rolls, and more.

3. Capito Cafe
Capito Cafe has locations across Bishkek and it is a charming haven for coffee lovers and food enthusiasts alike. 4. Ecoff
Ecoff is not a restaurant but they are a brand that sells frozen plant-based products. They carry various products like vegan sausages, cutlets, meatballs, and even steak. You'll be able to buy their products and prepare them at home, so you can enjoy a nice vegetarian, vegan meal. You won't be able to find their products in the major grocery stores, but the specialty organic, eco-friendly stores such as:
